Boulder's All Roads is teaming up with local chefs to cook monthly meals using donated ingredients for people experiencing homelessness at the overnight shelter.

Why it matters: It's a creative way to turn community generosity into something practical — hot meals — while bringing in culinary experts to improve the experience and dignity of shelter dining.

Driving the news: All Roads, formerly known as the Boulder Shelter for the Homeless, will launch its "Chefs at the Shelter" program Monday, per a release.

Once a month, a guest chef from a local restaurant will join the shelter's kitchen staff to prepare dinner for up to 180 nightly guests.

How it works: About 90% of the shelter's food is donated, so chefs won't know what they're cooking until they arrive, creating "a mission-driven culinary challenge in the spirit of the popular cooking show 'Chopped.'"

Yes, but: "We're not here to flex – we're here to feed people and help our community," said Sink chef Chris Cunningham.

Participating restaurants include: Blackbelly, The Buff, Café Aion, Centro, Chautauqua Dining Hall, Escoffier School of Culinary Arts, Jax Fish House & Oyster Bar, River & Woods, The Post, The Sink, T/aco and West End Tavern.

Alpine Bank and the Daily Camera are sponsors.

What they're saying: "Chefs at the Shelter is more than just a dinner service. It reflects a core belief that everyone deserves to be treated with dignity, compassion and respect," said Michael Block, CEO of All Roads, in a statement.

How to help: Each event offers $1,000 sponsorships to help cover meals and shelter costs.

The big picture: Boulder continues to look for ways to address homelessness, particularly chronic homelessness.

NASA is shifting focus to returning humans to the Moon after Artemis II's safe return, with Colorado researchers playing a key role in upcoming missions.

Why it matters: Some of that research is happening in our backyard at University of Colorado Boulder.

State of play: Following Artemis II, Artemis III will involve testing one or both of SpaceX and Blue Origin's lunar landers in Earth orbit, sometime in 2027.

The next crewed Moon landing is set for Artemis IV in 2028, according to NASA administrator Jared Isaacman's updated timeline.

Yes, but: A lot of work still needs to be done before humans can once again step foot on the Moon.

Zoom in: Paul Hayne, a planetary scientist at CU's Laboratory for Atmospheric and Space Physics (LASP), is part of the team working to make that happen.

Hayne's team has developed an infrared camera called the Lunar Compact Infrared Imaging System, or L-CIRiS, that'll be deployed next year near the Moon's South Pole to search for ice, which could be a water source for a long-term lunar base.

Understanding thermal activity on the Moon will also be useful in planning lunar expeditions, since Hayne said astronauts have narrow windows to work in due to the extreme temperatures.

Hayne is working to create computer simulations of the lunar surface to help train astronauts, too.

The 3-D simulations include "sunlight and illumination conditions, where the shadows are, the temperature of those shadows, where they might find ice," he told us.

The bottom line: Even in the face of possible big cuts to NASA, researchers like Hayne are hoping the momentum of the Artemis II mission will set the stage for mankind to take its next giant leap.

"It was a very important step in the direction of sending humans back to the Moon and testing the hardware that will be used to accomplish that mission," Hayne said.

A University Hill bar will lose its liquor license and be barred from reapplying for 10 years under a settlement with the city, ending a licensing case tied to a police investigation.

State of play: The deal closes the city's case without a public hearing, leaving key details about the underlying police investigation undisclosed.

The latest: At a Boulder Beverage Licensing Authority meeting on Monday, attorneys said Scrooge Sul owner Minkyu Kim agreed to a stipulation that the bar committed at least one liquor license violation.

The BLA unanimously approved the agreement, which revokes the license and blocks reapplication for a decade. 

Board members and attorneys did not comment.

Between the lines: The settlement avoided testimony from Boulder police, limiting what was publicly aired about the alleged violations.

Boulder police have not publicly released additional details since their initial announcement last month, leaving key aspects of the investigation unclear.

Catch up quick: Police previously said the case involves reports of "intoxicated underage females" at the business, 1149 13th St.

Local law enforcement has not said how many individuals may be involved.

No arrests have been announced, though police previously said they were investigating a suspect.

What's next: With its liquor license revoked, it's unclear what the future holds for the business.

Reality check: Scrooge Sul would not be the first University Hill establishment to lose its license amid concerns about underage drinking.

The big picture: Officials at Greenwood Wildlife Rehabilitation Center say they're bracing for what could be a record spring and summer intake if drought conditions persist.

Greenwood treated more than 5,000 animals in 2025 for the first time in its history, driven largely by increased capacity.

Threat level: Already, the center has seen a 400% increase in squirrel mange cases this spring, community relations manager Mysti Tatro told us, citing warmer winter temperatures that allow mites to thrive.

Dry conditions can also force birds to gather around limited water sources, making diseases like avian influenza easier to spread.

Scarce food and water can push wildlife deeper into more urban areas, increasing the number of injured, displaced or abandoned creatures. 

Between the lines: The dry weather is also creating operational challenges.

Potential summer water restrictions could make it harder to clean animal enclosures.

The facility is also stockpiling more emergency supplies ahead of possible power outages tied to wildfire risk this summer.

Boulder's World Famous Dark Horse Bar and Grill plans to relocate to Louisville, Axios has learned.

Why it matters: Boulder may lose one of its most beloved and eclectic dive bars — but fans won't have to say goodbye for good.

The latest: The bar plans to reopen in a building near U.S. 36 and McCaslin Boulevard in Louisville, director of operations Chris Verrips told Axios Boulder on Wednesday.

The new spot will keep "the same name, the same charm and hopefully most of the same staff," he added.

Despite auctioning off many of the Boulder building's knickknacks, the team held onto items that will reappear in the new space.

Context: The original site is slated for demolition as part of the Williams Village II redevelopment, which will bring five buildings and roughly 400 housing units.

Developers had hoped to incorporate the Dark Horse into the project, but the bar instead announced it would close "for good" and held a farewell bash in March.

Between the lines: The team explored multiple locations, including others in Boulder, before landing on Louisville.

Some details, including the exact address, are still being finalized.

What they're saying: Verrips said leaving the Baseline location after 50 years is bittersweet.

"This place impacted a lot of people," Verrips said. "It was not just your regular watering hole."

Yes, but: Staff plans to recreate the Dark Horse experience as closely as possible.

And yes, that includes keeping its iconic bathroom doors, plus staples like karaoke and trivia night.

"We're going to use as much as we can to make this place feel like the Dark Horse," Verrips said.

What we're watching: The goal is to reopen by football season — if not sooner.
