Boulder's Okigiri Cafe puts sandwich spin on onigiri

For folks looking to shake up their lunch routine, check out the new Okigiri Cafe in Boulder.

What to expect: The cafe, at 1629 28th St., just off Arapahoe Avenue., specializes in what it calls "Okinawan onigiri," a western spin on the traditional Japanese rice snack.

Basically, it's like a musubi and a sandwich had a baby.
Most menu creations come with protein, egg and lettuce. Fillings include chicken, beef, fish, shrimp and, yes, Spam.
The cafe also serves tea and coffee drinks.

🗯️ My thought bubble: The teriyaki beef and Spam options were my favorites. They reminded me of something you'd grab from a convenience story in Hawaii.

📍 If you go: Open Tuesday–Friday and on Sundays from noon–4:30pm and on Saturdays from noon–6pm.

The cafe is closed on Mondays.
