Morso reawakens south Boulder as a dining destination

Context: Morso is Rosenberg's third restaurant, following Blackbelly and Santo.

• He leaned into Italian-American comfort food, inspired by his family's East Coast roots and his wife's New Jersey upbringing.
• The building's existing pizza oven — left over from a Mountain Sun spinoff called Under the Sun — helped seal the concept.

What to expect: Pies range from your classic margherita to Colorado twists like corn and green chile, and most cost less than $20.

• Housemade pastas like rigatoni alla vodka and mafaldine bolognese run $20–$35. Chicken, shrimp and eggplant parmigianas anchor the larger plates, alongside Italian wines, cocktails and amari.

Best bites: Our favorites were the linguini alle vongole and the rich pappardelle short rib sugo.

• Don't skip the seasonal additions, either. Last week's burrata came topped with Palisade peaches that stole the show.
