A Michelin-recognized Denver duo is bringing a bold new Japanese concept to Boulder next week.
The big picture: Boulder's fast-growing Asian dining scene is getting a high-profile addition — and this one aims to push beyond traditional sushi.
The latest: Christopher and Ariana Teigland, the team behind Denver's acclaimed Glo Noodle House, will open Odd Rabbit on April 30 at 5863 Arapahoe Ave.
Behind the scenes: The 90-seat restaurant — with a 10-seat chef's counter and a 40-seat patio — sits just blocks from Blackbelly, where the couple first met.
- "The second we kind of walked into it, we're like, this is home. This is where we're gonna do this," Chris Teigland told us.
What to expect: Old Rabbit leans "traditionally non-traditional," with a menu that goes well beyond standard sushi.
- Sushi chef Stephen Nguyen, known for his work at Denver's Temaki Den and Uncle, will craft a menu focused on inventive nigiri, hand rolls and unexpected sashimi.
- "It won't be your spot to go and get, like, a bunch of California rolls," Teigland said.

Yes, but: The expanded kitchen gives the team room to experiment beyond raw fish.
- Think fried fish, chicken wings and even a double cheeseburger for those a little squeamish about seafood.
- For "the dad whose daughters wanted to go out for sushi that night and he's not going to touch anything raw," Chris Teigland said.
- And of course, expect noodles — along with a cocktail and sake program.
Zoom out: Old Rabbit joins a robust Japanese and sushi scene, with incoming Wellness Counter, the recent additions of Yotsuba and Kura, and local favorites like Hapa and Japango.
- "It seems like there's a lot of high-quality concepts opening ... recently, so we're really excited to be kind of a part of that next wave," Ariana Teigland told us.
- "I do think beyond the sushi program, a lot of the menu is really exciting and will separate us a little bit from other Japanese spots in the area."
