"Top Chef" alum Justin Sutherland cooks up expansion of new breakfast sandwich concept

Chef Justin Sutherland is eyeing an expansion of his new breakfast sandwich restaurant.

Dig in: The "Top Chef" alum told the Minneapolis/St. Paul Business Journal that he's looking at opening new locations of Justin's Big E Sandwiches in Chicago, Atlanta, and Minneapolis, as well as a second one in St. Paul.

  • Eventually, he hopes to have 20 sites.

What he's saying: "I think it's a great concept, the food's good, footprint's easy. Smaller footprint, lower food cost, counter service," he said. "That's just kind of the direction things are going."

Catch up fast: Sutherland earlier this year left Handsome Hog, the St. Paul Southern restaurant that helped launch his stardom.

  • His new eateries are operated by a restaurant group he started with his dad.

What else we're watching: Sutherland told the publication that his shuttered Stillwater haunt The Pearl and the Thief might soon get a second act.

  • Plans for two more local outposts of Northern Soul are also in the early stages.
